Description

Swamp Soup is a hearty, nutrient-packed dish loaded with greens, beans, and smoky flavors, perfect for a comforting and healthy meal.


Ingredients

  •  2 tbsp olive oil  
  •  1 onion, diced  
  •  2 cloves garlic, minced  
  •  4 cups vegetable broth  
  •  1 can (15 oz) diced tomatoes  
  •  1 can (15 oz) white beans, drained and rinsed  
  •  2 cups kale, chopped  
  •  1 cup spinach, chopped  
  •  1 tsp smoked paprika  
  •  ½ tsp salt  
  •  ½ tsp black pepper  
  •  ½ tsp red pepper flakes (optional)  
  •  1 tbsp lemon juice 

Instructions

1. Heat olive oil in a large pot over medium heat.  

2. Add diced onion and sauté until translucent, about 3 minutes.  

3. Stir in garlic and cook for another minute.  

4. Pour in vegetable broth and diced tomatoes. Bring to a simmer.  

5. Add white beans, kale, spinach, smoked paprika, salt, black pepper, and red pepper flakes.  

6. Simmer for 15-20 minutes, stirring occasionally.  

7. Stir in lemon juice and adjust seasoning if needed.  

8. Serve hot and enjoy!  

Notes

  •  For extra protein, add cooked chicken or sausage.  
  •  Adjust spice levels by adding more red pepper flakes.  
  •  Swap kale or spinach with collard greens or Swiss chard.
