Description

Ingredients

  • 3 large eggs
  •    2 tbsp milk
  •    1/4 tsp salt
  •    1/8 tsp black pepper
  •     1/4 cup diced tomatoes
  •    1/4 cup diced bell peppers
  •    1/4 cup diced onions
  •    1/4 cup shredded cheddar cheese
  •    1 tbsp butter
  •    1/4 tsp chili powder
  •   1 tbsp chopped fresh cilantro
  •  1 tbsp salsa (optional)

Instructions

1. In a bowl, whisk together eggs, milk, salt, black pepper, and chili powder.

2. Heat butter in a non-stick pan over medium heat.

3. Add onions and bell peppers; sauté for 2 minutes until softened.

4. Pour the egg mixture into the pan, tilting it to spread evenly.

5. Cook for 2–3 minutes until the edges set, then sprinkle tomatoes and cheese on one half.

6. Fold the omelette in half and cook for another minute until cheese melts.

7. Transfer to a plate, garnish with cilantro, and serve with salsa.

Notes

  • Use jalapeños for extra spice.
  • Swap cheddar for Monterey Jack or queso fresco.
  • Serve with avocado or sour cream for added creaminess.
