Ingredients
- Chicken
- Carrots
- Celery
- Onion
- Garlic
- Tomatoes
- Fresh Herbs
- Pasta or Rice
- Parmesan Rind
- Salt & Pepper

- Water or Chicken Stock
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion, carrots, and celery; sauté until softened (about 5 minutes).
3. Stir in garlic, oregano, basil, red pepper flakes, salt, and pepper.
4. Add chicken breasts and pour in the chicken broth and diced tomatoes.
5. Bring to a boil, then reduce heat and simmer for 20 minutes until chicken is cooked.
6. Remove chicken, shred with forks, and return to the pot.
7. Stir in pasta and cook for 8-10 minutes until tender.
8. Add spinach or kale and cook for another 2 minutes.
9. Serve hot, topped with Parmesan cheese and fresh parsley.
